Chocolate marshmallows with coconut
Here is a recipe to make homemade two chocolate marshmallows with shredded coconut. A real treat.
1. Soften the gelatine leaves in cold water. Over low heat, cook sugar with 15 cl water until clear and thick consistency. Remove from heat, pour some lemon juice over.
2. Drain the gelatine and dissolve in the syrup. Whip egg whites till stiff peaks, pour syrup over while stirring constantly. Put half ice in a large bowl and place the mixture above it, whisk until cooling down.
3. Mix icing sugar and cornstarch, coat a rectangle baking mold, bottom and sides. Pour the mixture and smooth with an offset spatula. Store in the fridge for 30 minutes.
4. Unmold and cut into squares. Melt the dark chocolate and dip one marshmallow square at a time and roll into shredded coconut. Repeat the same operation with white chocolate. Serve with coffee.
