French fries
Making homemade fresh french fries, tasty and easy!
1. Peel the potatoes, slice them into 1 cm-thick , then cut into sticks. Rinse with cold water, drain and pat well on paper toweling.
2. Heat oil in a deep fryer to 160°C. Put small batches of potato strips in the basket. Deep fry them for about 5 minutes. When they rise to the surface, the potato strips are ready, still tender with a pale colour.
3. Remove the basket, set the fries aside and let drain on paper towels. Raise heat between each batch, and repeat until all of the potatoes are cooked.
4. For the second deep fry, reheat oil to 180°C. Transfer the potatoes, in small batches, and fry again. Cook until gorlden-brown for about 3 minutes.
5. Drain on paper toweling and sprinkle with fine salt to taste. Serve immediately.
