Tomato and mozzarella terrine

For starter, enjoy this terrine of tomato with mozzarella. Easy to make and very tasty.

  Ingredients

1. Heat a large pot of water and boil the tomatoes for 20 seconds. Peel and cut in two. Remove the seeds.

2. Peel and chop the onion and garlic. Cut the half bell pepper into pieces. Blend the vegetables with oil, vinegar, basil leaves, salt and pepper. Refrigerate.

3. Line a cake pan with cling film. Soften the gelatine in a bowl of cold water for 10 minutes. Heat gently in a pot with the tomatoes, 1/2 the stock cube and 10 cl of water. Remove from heat and add the softened gelatine. Mix and pour a quarter into the mould. Place for 15 minutes in the fridge.

4. Cut the balls of mozzarella in strips. Place into the moulds. Pour the rest of the tomatoes on top. Cover with cling film and place for 2 hours in the fridge.

5. Remove the terrine from the mould by soaking for a few seconds in hot water.
