Fish and seafood curry soup

1. Peel and chop the onion and garlic. Wash the leek, fennel and celery, then dice them. Scale, gut and trim of the mixed fish, wash and cut into pieces. Set aside.

2. In a large pot, cook the heads and bones of the mixed fish for 15 minutes with 15 cl olive oil. Pour 7 cl of dry white wine and cover with water. Add the vegetables, tomato paste, bouquet garni, a pinch of coriander, 1 teaspoon of sweet chili pepper, coarse salt and pepper. Leave to simmer for 2 hours.

3. Peel and wash the potatoes and cook for 10 minutes in water with salt.

4. Remove the heads and bones, and adjust the seasoning of the broth. Bring to a boil and add the mixed fish. After 2 minutes add the rest of the seafood and curry powder. Cook for 8 minutes.

5. Divide the fish, seafood and potatoes into 4 shallow dishes. Add the broth and enjoywith garlic bread.
