Potato pancakes with smoked salmon

Make these filling potato pancakes with smoked salmon slices.

  Ingredients

1. Peel 500 g of potatoes, cut into pieces. Boil them in a pan, drain and dry the potatoes in the empty pan for 1 minute over the heat.

2. Puree the potatoes, add 3 tablespoons of flour, 4 eggs and 100 g skim milk powder. This will give the pancakes a softer texture and a golden colour.

3. In a non-stick pan, drizzle some olive oil, then pour a ladle of batter and cook for 3 minutes over low heat on each side. Decorate the plates with 1 slice of smoked salmon.

Our cooking tip: Serve with a lightly seasoned salad with olive oil and lemon.
