French toast with mushroom cream and foie gras

For a chic and easy entree, here is a recipe to prepare French toasts with a mushroom cream and foie gras.

1. Rinse the mushrooms, keep six of them and chop the rest. In a skillet, sauté all in 40 g butter with thyme, salt and pepper. For decoration, keep the whole mushrooms and 2 tablespoons chopped mushrooms.

2.  Add the two creams to the rest in the pan, and cook for 3 minutes. Blend all ingredients and set aside 20 cl for the sauce. Let cool the and whip it with the whole egg and egg yolk.

3. Cut the brioche into 6 slices and soak each side in the mixture, then brown in a pan for 3 minutes per side with the remaining butter.

4. Sprinkle chopped mushrooms over the French toasts. Cut the foie gras into 6 slices and put them on top. Decorate with the reserved porcini and pour the remaining sauce.
