Roast pork with figs

1. Sprinkle half of the thyme. Cut the dried figs in two, save the flesh in a bowl and add butter and thyme. Combine.

2. Preheat the over at th. 7 –210°C. Cut the roast pork in half along lengthwise and spread the dried fig mixtureon it. Close up the roast and cover the meat with a thin layer of fat . Tie the roast with kitchen string.

3. Place the roast in a baking dish, drizzle with olive oil. Add salt, pepper and the remaining thyme. Pour 20cl of water in the dish. Bake for 45 minutes, basting regularly.

4. Wash and dry the fresh figs and cut in half. 15 minutes before the roast pork is done, add the fresh figs to the dish and sprinkle with the meat juice.
