Potato salad with gherkins, boiled eggs and bacon

For starter, enjoy a potato salad with gherkins, boiled eggs and bacon, a classic recipe.

1. Peel the potatoes, put them in a saucepan and cover with salty water. Bring to a boil and cook 20 minutes. Drain and let cool.

2. Put the eggs in a saucepan, cover with water and bring to a boil. Cook for 10 minutes. Transfer eggs to a colander and place under coldl running water to stop the cooking. Peel eggs and cut into quarters.

3. Slice gherkins into thin rounds. Wash, pat dry and chop finely chives. Cut potatoes into small cubes. Place all ingredients in a salad bowl. Add some mayonnaise, mix and adjust seasoning if necessary. Refrigerate.

4. In a large pan, cook streaky bacon for 2 to 3 minutes on each side. Set aside on paper towel. Arrange the potato salad in small bowls, add the egg quarters on top and the streaky bacon. Serve the rest of mayonnaise apart.
