Pork ribs caramelized with fresh ginger

These caramelized ribs with fresh ginger will impress your guests.

1. Peel the ginger and slice it into thin small strips and put it in a large baking dish, add the ginger marmalade, soy sauce, sherry vinegar, the five spices, oil and a ground pepper. Mix.

2. Cut the ribs by two. Put them in the marinade to coat. Wrap with cling film and store in the fridge for 2 hours. Remove 1 hour before placing in the oven.

3. Preheat oven to th. 6-180°C. Bake for 30 minutes, then turn over. <span title="Ramenez la température du four à th. Reduce the temperature to th. 5/6 - 160°C and cook for 30 minutes.

4. When out of the oven, place the ribs on a baking sheet, top them with the cooking juices and place for 3 minutes under the grill. Meanwhile, deglaze the rest of the cooking juices over high heat in the pan with 3 tablespoons of water. Before serving the ribs, sprinkle with the caramelized juice with finely chopped coriander.
