Try this recipe for a lamb tajine with olives, peppers and potatoes. This dish is absolutely delicious.

1. Cut the lamb into pieces. Peel and chop the onions. Wash the bell peppers and cut in half. Remove the seeds and chop them. Peel the potatoes, wash and cut into large pieces.

2. Heat the oil in a tajine dish or in a pot and brown the lamb on all sides. Remove the meat and replace with the onions, bell peppers and the potatoes. Fry for 3 minutes while stirring.

3. Put the lamb back in the pot. Add the olives and all the spices, salt and pepper. Mix well. Pour in a glass of water, cover and cook over very low heat for 1 hour 45 minutes. Serve hot.
