Here’s a great recipe for red fruit tartlets. A very good dessert for summer days.

1. Prepare the pastry: Pour the flour into a bowl with the sugar and 1 pinch of salt. Make a well and add the butter in pieces with the whole egg. Work the dough with your fingertips. Form a ball and let rest for 1 hour in the fridge.

2. Preheat the oven to 150°C (th. 5).

3. Line a parchment paper each tartlet moulds. Divide the dough into 6 pieces. Roll out the dough with your hand directly into the moulds with a regular thickness by pressing firmly on the edges. Prick with a fork.

4. Bake for 20 minutes, the dough should be just colored. Place the tart on an oven rack and let cool before unmuolding.

5. Just before serving, melt the raspberry jelly, spread in the tarlter shells and garnish with berries. Serve immediately.

Our baking tip: Garnish the tartlet shells at the last moment not to soften the pastry.
