Make these refreshing pieces of green apple dessert sushi.

  Ingredients

1. Wash the rice, place it inside a pan filled with salted water. Boil for 3 minutes. Drain.

2. Boil the milk add the rice and leave to cook for 40 minutes over very low heat. Leave to cool.

3. Wash and dry the apples, cut them in half. Remove the core and the seeds. Chop and sprinkle with the lemon juice.

4. Using 1 tablespoon of rice, make a quenelle with your hands. Make 16 of these. Place them on a pretty plate and top with  one slice of apple on each. Serve cold.
