For a gourmet dish, here is a recipe to make small pancakes with smoked salmon and scrambled eggs. Let’s start cooking!

1. Prepare the pancakes: heat the milk in a small pan. Remove from heat and add the baking powder while mixing.

2. Break the eggs and separate the white and the yolks. Add the yolks to the milk, then the two flours and a pinch of salt. Leave to rest for 1 hour.

3. Whisk the egg whites until firm peaks and incorporate into the batter, then add the melted butter and the chopped herbs. Cook the pancakes in a small pan with butter for 1 minute on each side. Set aside in a warm oven, preheated on minimum.

4. Prepare the scrambled eggs: beat the eggs in a bowl with cream. Add salt and pepper. Melt the butter in a pan set in a bain-marie and add the beaten eggs while mixing constantly over low heat with a wooden spatula. Mix for 5 minutes until creamy.

5. Cut the smoked salmon into strips. Divide the pancakes on to plates. Add the scrambled eggs and the smoked salmon.
