Scallops with grapefruit syrup

This dish featuring scallops with grapefruit syrup is very suitable for special occasions. It is both elegant, refined and tasty.

1. Prepare the sauce. Mix the orange juice and grapefruit syrup and add the sugar. Boil for about 20 minutes over medium heat, stirring regularly with a wooden spoon until a syrupy consistency. Keep warm.

2. Peel the oranges, segment with a sharp knife then set aside onto a plate.

3. Ask your fishmonger to prepare the scallops. If they are frozen scallops, let them thaw in a mixture of water and milk and then pat them gently.

4. Cook the rice as directed on the package.

5. Heat a little olive oil over medium heat in a nonstick skillet. Put the scallops and  cook stirring until they are colored. It takes approximately 1 minute depending on thickness.

6. Serve with citrus segments and rice. Drizzle some grapefruit syrup and sprinkle with crushed pink peppercorns.
