Puff pastry cod

For a gourmet dish, here is an easy recipe to prepare a puff pastry cod with carrot and zucchini.

1. Peel the carrots, zucchini and onion. Chop the onion and cut the carrots and zucchini into small sticks. Wash, dry, thin out and chop the parsley.

2. Preheat oven to 210°C (th. 7). Heat oil in a skillet. Fry the onion without coloring. When it is translucent, add the carrots and zucchini. Salt and pepper, stir, reduce the heat and cook over low heat for 15 minutes.

3. Meanwhile, roll out the dough on a floured surface. Cut 6 rectangles. Divide the vegetable mixture on half of each rectangle, leaving an edge of 1 cm. Place the cod fillet on top of the vegetables. Salt and pepper.

4. Fold the dough to and press to seal firmly.

5. Beat the egg yolk with a little water and brush the dough. Place the puff pastry on parchment paper and bake for 30 minutes. Serve immediately.
