Lobster bisque

1. Shell the lobsters. Set aside the flesh for another recipe and chop the shells.

2. Peel and chop the onions, celery and carrot. Peel and chop the garlic cloves.

3. Heat the olive oil in a large saucepan. Fry the shells of the lobsters for 8 minutes, stirring. Add the vegetables, garlic and tomato paste. Stir and continue cooking for 5 minutes.

4. Sprinkle flour and mix. Then pour in the brandy, white wine and fish stock. Stir, sprinkle cayenne pepper, salt.

5. Bring to a boil and skim. Lower the heat and cook gently for 45 minutes. When the cooking time is up, mix finely the bisque and pass it through a fine sieve.

6. Put back to the heat and cook until the first simmering. Divide into bowls, add 1 tablespoon of sour cream, sprinkle with a pinch of cayenne pepper and serve immediately.
