Fish parmentier

The classic recipe of parmentier is made of mashed potatoes and ground beef. This variant features cod and cheese. It is just tasty.

1. Peel the potatoes. Wash and cook for 20 to 25 minutes in boiling salted water. Drain and mash into a puree with a fork.

2. Heat the milk in a pan. Pour in the puree and mix. Incorporate 30 g of butter. Add salt and pepper. Keep warm and set aside.

3. Peel and chop the onion and garlic. Fry quickly in a pan with a drizzle of oil. Place the cod fillets in the pan. Salt and pepper. Leave to cook over low heat for 5 minutes on each side until the fish flakes. Remove from heat.

4. Preheat the oven at  210°C (th.7). Divide the fish in 4 small individual pans and add the tarragon. Cover with the mashed potato. Sprinkle grated cheese and knobs of butter. Bake for 10 minutes. Serve immediately
