Brandade with chanterelles

1. The day before, soak the cod fillets in cold water, changing the water several times.

2. The next day, heat a large amount of water. Immerse the cod fillets, cover and off the heat, let poach for 10 to 15 minutes.

3. Peel and chop the garlic. Clean the chanterelles in a cloth without washing. Heat 5 cl of oil in a skillet and sauté the chanterelles for 3 minutes on high heat, stirring. Add salt and pepper and cook for 3 minutes over low heat.

4. Drain the fish, remove the skin and bones and crumble. Mix it with the rest of the oil and chopped garlic. Divide the cod in a baking dish and sprinkle with grated cheese and mushrooms.

5. Preheat the oven to th. 7-210°C. Bake for 10 minutes. Serve warm.
