Scrambled eggs with smoked salmon

For a fuss-free breakfast or starter, try this easy scrambled eggs recipe topped with smoked salmon.

1. Gently break the caps of the eggs leaving the whole shell. Pour the eggs into a bowl. Beat the eggs and season with salt and pepper.

2. Rinse the shells and place them in egg cups to dry. Wash and dry the chives. Chop the smoked salmon into strips. Set aside.

3. Heat 2 tablespoons of oil in a pan, pour the beaten eggs and cook over high heat, stirring constantly with a wooden spatula. When the eggs are cooked, remove from heat and incorporate the heavy cream to stop the cooking.

4. Divide the scrambled eggs into the shells and add the strips of smoked salmon. Decorate with heavy cream and a few sprigs of chives. Serve immediately.
