Scallop tartare with mango

1. Cut the limes in half and draw a slice of each. Squeeze the rest and reserve the juice. Whas, dry and mince dill. Keep some sprigs aside. Zest the orange, equivalent to 1 tablespoon.

2. Peel the mangos, and cut them in small dices. Proceed the same for scallops. In a bowl, mix the lemon juices, the finely chopped dill, the orange zests with a few drops of olive oil. Season with salt and pepper. Divide the mixture evenly in 4 ramekins. Refrigerate for 30 minutes.

3. Turn them out in 4 plates to serve. Decorate with half a slice of lemon and sprigs of fresh dill.
