Here is a quick recipe to make a club sandwich with haddock, cucumber and mozzarella. Perfect for snacks.

1. Toast slightly 12 white bread slices. Spread a thin layer of mustard. Wash and slice 2 cucumbers, keeping the skin. Cut buffalo mozzarella into slices. Cut 4 slices of haddock fish.

2.  Place cucumber slices on 4 slices of bread. Season with olive oilsea salt and pepper. Top with 1 slice of bread, spread over mozzarella and haddock.

3. Finish with 1 slice of bread. Cut off bread crust and cut into triangles.
