1. Butter and flour a baking sheet. Melt the butter and let it cool. Separate the egg whites from the yolks. Whisk the yolks with the sugar until the mixture becomes significantly lighter in colour. 

2. Chop the chocolate in a bowl and melt it in a bain-marie. Pour it over the egg yolks mixture. Add flour, almond powder and crushed chocolate. Mix and pour the melted butter. Beat the egg whites to soft peaks and incorporate them in the preparation: the batter should be creamy.

3. Preheat oven to th. 6-180 ° C. Using heaping tablespoons, form balls of dough on the baking tray. Place, about 3 inches apart, and bake for 15 minutes. Remove from oven, and let cool. Serve the chocolate cookies with ice cream.
