Tuna salad with potatoes and turmeric sauce

1. Wash, peel and drain the salad. Steam the potatoes for 15 minutes.

2. During this time, remove the stems of the mushrooms. Chop them up. Leave the potatoes to cool, then peel and place in a bowl. Drain the tuna.

3. Prepare the sauce: warm the milk over moderate heat in a pan, then add the flour and mix for 3 minutes. Remove from the flame and progressively incorporate the yolk, juice of half a lemon, oil, mustard and the turmeric while stirring. Add salt and pepper. Leave to cool, then pour the sauce over the potatoes.

4. Arrange the salad on a plate, place the potatoes in the centre and sprinkle the strips of mushroom. Crumble the tuna and divide on the salad.

5. Mix the oil, lemon juice and salt in a bowl and sprinkle over the green salad. Decorate with chives before serving.
