Pineapple and prawn salad

For shrimp lovers, here is a recipe that nicely enhances their flavor. Shrimp are served with pineapple slices.

1. Cook the rice according to the directions on the packet. Drain and run under cold water. Set aside.

2. Shell the prawns. Squeeze the lemon. Peel the pineapples and remove the core and chop into cubes. Wash and dry and remove the seeds of the bell pepper. Dice into cubes. Wash and dry the cilantro. Chop 1 sprig and leave the rest for decoration.

3. Toss the prawns, the diced pineapple cubes and bell peppers, the chopped cilantro and the rice. Sprinkle with lemon juice, pour the olive oil, salt , pepper and mix.

4. Divide the salad into 6 bowls and decorate the sprigs of cilantro. Serve fresh.
