1. Preheat the oven to th. 5/6 – 160°C. Place the mackerel fillets in a baking dish and sprinkle with lemon juice. Marinate for 15 minutes in and wrap with cling film. Remove the film and place in the oven for 10 minutes, then let cool.

2. Peel the apple and celeriac. Dice the apple into small pieces and make some celeriac shavings using a peeler. Cut the cherry tomatoes in half and chop the herbs.

3. In a bowl, combine the cherry tomatoes, diced apple, celeriac chips and herbs. Crumble over the mackerel fillets, salt and add the previously crushed pink peppercorns. Sprinkle with a dash of olive oil and mix. Place for 1 hour in the fridge before serving.

4. You can place the mixture into small jars with toasted bread slices.
