Green lentil salad with salmon
You are invited to discover the delicate flavour of green lentils with this salad featuring salmon and a creamy orange dressing.
1. Peel, clean and crush the garlic clove.
2. Simmer the green lentils in a pot with water and garlic. After 20 minutes, season with coarse salt and mix. Cover and turn off the heat. Rinse and set the lentils aside.
3. Rinse the quinoa. Boil the quinoa in a pot of salted water with Espelette pepper and leave to cook for 9 minutes. Stop the cooking, cover and leave to rest for 2 minutes. Rinse the quinoa in cold water, drain and set aside.
4. Cut the salmon into fine strips and set aside.
5. For the sauce, squeeze the orange juice. In a bowl, mix the cream, orange juice, salt, pepper and the fennel seeds. Season to taste.
6. In a large bowl, toss the lentils, quinoa and salmon with the sauce. Serve in small bowl with almond tuiles.
