Chocolate passion truffles
For a reception dinner, here is an easy recipe for chocolate passion truffles. A real dessert party.
1. Cut the chocolate and praline into pieces. Melt them in a bain-marie.
2. Cut the passion fruit in half. Scoop out the flesh the pulp and juice with a teaspoon. Place in a small strainer over a pan. Mash the fruit so that the juice falls into the pan.
3. Add honey and icing sugar into the pan containing the passion fruit juice. Bring to a boil. Pour this mixture over the melted chocolate and praline.
4. Stir in the butter. Mix and refrigerate the ganache for 1 hour. With your hands, roll mounds into balls. Repeat with the remaining ganache.
5. Mix cocoa powder and shredded coconut in a bowl. Roll balls in coatings. Place them in a plate. Cover with cling film and place in the fridge until ready to serve. Present the truffles in small spoons.
