1. Put the gelatine to soften in cold water. Brush under warm water 1 orange, dry and segment. Squeeze 2 oranges, pour the juice into a saucepan and bring to a boil.

2. Remove from the heat and stir in the softened gelatine. When it is melted, divide the mixture into 4 glass jars. Let cool and keep in fridge.

3. Melt the chocolate over low heat in a saucepan with 2 tablespoons of water. Mix until a smooth cream.

4. Separate the egg whites from the yolks. Add the yolks to the chocolate and mix. Beat the egg whites until stiff with 1 pinch of salt. Fold the chocolate gently. Leave for 3 hours in the fridge.

5. Before serving, divide the chocolate mousse on top of the jelly and garnish with orange zest. Serve immediately.
