Chocolate king cake – chocolate galette des rois

In France, early January is traditionally the month of galette des rois. Follow this easy recipe with a chocolate twist.

1. Chop the chocolate into pieces and melt in a bain-marie. In a bowl, whisk 2 egg yolks with sugar. Add the almond powder and butter, little by little, and the melted chocolate. Combine well.

2. Roll out puff pastry on a baking sheet lined with parchment paper and prick it with a fork. Spread chocolate mixture leaving an edge. Add the lucky charm. Place the second circle on top matching the edges of the circles. Press the edges to seal.

3. Whisk an egg yolk with water and brush the top.  With the point of a knife, create a design on top. Refrigerate for 30 minutes.

4. Preheat the oven to th. 6/7 210°C. Bake for about 30 minutes, until the pastry is golden brown. Let cool before serving.
