Chocolate fondant with cherries
First, one could think of a classic chocolate fondant, but this dessert finally reveals an exquisite cherry taste. A real treat!
1. Preheat the oven to th. 6/7 – 200°C. Break the chocolate into pieces. Set aside 12 chocolate squares and melt the rest in double boiler (or microwave) with the butter cut in pieces. Stir to obtain a smooth and shiny chocolate.
2. Put the eggs in a bowl with sugar. Whisk until the mixture is pale. Stir in the flour. Pour this mixture over the chocolate, stirring, until a perfectly smooth texture.
3. Buttered generously the bottom and sides of 6 ramekins and pour the chocolate mixture to a third. Insert in the center of each ramekin 2 squares of chocolate and 2 candied cherries, and cover with the remaining batter. Bake for 10 to 15 minutes. Don’t leave too long as the centre should be runny.
4. Remove the fondants from the oven and let cool a few minutes. Serve warm.
