Wholemeal cake with carob and coconut

1. In a bowl, mix the carob powder, cocoa powder, flour and baking powder. Beat the eggs with sugar. Incorporate the dry mixture and then add the milk and melted butter to obtain a smooth mixture. Add the last 50 g of grated coconut.

2. Pour the mixture into a buttered mould that can be placed in the microwave and bake for 8 minute on the highest power. Leave the cake to cool and unmould.

3. Toast the almonds in a dry pan. Serve the cake sprinkled with grated coconut and the toasted almonds. Sprinkle the icing sugar on top.
