Peach juice

To cool off, here is an easy recipe for a cold drink: peach juice. It's delicious.

1. Rinse the peaches. Plunge in a pan of boiling water for 5 minutes. Drain and pour immediately into a bowl filled with cold water. Drain again, peel discard pit and cut in half.

2. Blend half of the peaches with the cane syrup. Cut the remaining peaches into cubes. Wash and chop finely the mint leaves.

3. Pour the juice and diced peach in a large pitcher. Add crushed ice and chopped mint. Mix. Put into glasses and serve chilled.
