1. Salt and pepper the lamb knuckle. Mix the crushed cilantro, flour, rosemary and chopped thyme, then roll the lamb knuckle in the mixture until it is well coated.

2. Brown the lamb knuckle in hot oil and add the crushed garlic, chopped onions, bell pepper and diced celery and olives. Fry for 5 minutes, deglaze with white wine and add the tomatoes. Leave to simmer over very low heat for 2 hour while covered.

3. Check the consistency of the sauce 30 minutes before the end of cooking. When it is too liquid, cook uncovered. If it is too thick, add some water and continue cooking, covered.

4. Serve the lamb knuckle and sprinkle with chopped parsley accompanied with cooked vegetables.
