To make 6 bagels :

1. Dissolve the yeast with 1 tablespoon of tepid water. Mix salt, sugar and flour. Add 20 cl of tepid water, then dissolved yeast, olive oil and knead for 10 minutes.

2. Put the dough in a bowl, cover with a cloth and let rise for about 1 hour 30 minutes in a warm place (ideally 30°C). It should double in volume. Then flatten it, and knead dough with palm to expel all the air.

3. Cut the dough into 6 equal parts and roll the dough into cylinders of 25 cm long rope. Then shape the bagels. Cover with a cloth and leave to rise again for about 30 minutes.

4. Boil a pot of water with salt and sugar, then poach bagels for 1 minute and flip them over for 30 more seconds. Use a skimmer to scoop it out and let drain on a wire rack. Bake in preheated oven at 220°C (th. 7/8) for 25 minutes, checking out the end of cooking.
