Savoury ham and vegetable cake

1. Peel the carrots and cut into small cubes. Peel and chop the shallot.

2. Heat 2 tablespoons of olive oil in a pan and fry the shallots without browning. Add the diced carrots and peas. Cover with water, season lightly and add the bouquet garni. Simmer and cook for 20 minutes, uncovered. Drain the vegetables and remove the bouquet garni.

3. Preheat the oven to th. 6/7 - 200°C. Dice the ham. With an electric mixer, beat the eggs with a pinch of salt and 5 pepper blend, then add the milk, 4 tablespoons of olive oil, yeast and flour continuing to mix until to obtain a smooth batter. Pour into a bowl and stir in the drained vegetables and diced ham with a spatula.

4. Oil a non-stick loaf pan and pour the batter. Move the oven rack to the lowest position in the oven and bake for 10 minutesReduce the temperature at th. 6-180°C and bake for 35 minutes. Let the savoury cake cool for 10 minutes before unmolding onto a wire rack. Serve warm or cold.

Our cooking tip: For this recipe, we advise you to use only the ham (white ham) as shown. Do not substitute with parma or prosciutto ham, it would be too salty. You can add zucchini with peas to make the savoury cake more flavorful.
