Smoked salmon tartare with mango

  Ingredients

1. Skinless fresh smoked salmon fillets of 150g each, and dice. Peel the 2 avocados, and the mango. Dice in small pieces. Chop finely the shallot and ½ bunch of chives.

2. Peel and segment the lime. Cut them in small cubes and collect the juice. Crush roughly 1 teaspoon of green pepper. Dice 15 g of capsicum.

3. Mix together and season with 1 tablespoon of olive oil, 1 teaspoon of Worcestershire sauce, sea salt, 1 teaspoon of pink peppercorn, 1 teaspoon of white pepper and a pinch of brown sugar. Let marinate for about an hour.

4. Place the mixture into individual circles. Serve with an assortment of 50 g of lamb's lettuce and an endive cut into julienne. Season with olive oil and a pinch of salt.
