1. Prepare the couscous as directed on the package. Cut the zucchini and red onion into rings. Cut the peppers in half.

2. Roast the pepper halves without oil in a nonstick skillet and set aside.

3. Brown the other vegetables in olive oil. Then mix them with semolina, raisins, oil and lemon juice.

4. Stuff in the peppers and serve.
