Ingredients
1. Pour the milk in a pot. Add 750 g sugar. Split the vanilla pod in 2 lengthwise and scrape the beans. Add to the pot. Stir. Reduce the mixture by half on very low heat. Leave the dulce de leche to cool.
2. Preheat the oven to 180 °C (th.6). Take 4 individual moulds, place in the bottom two-thirds of 1 teaspoon of sugar. Brown over moderate heat.
3. When the milk reduction is cooled, add the yolks and a whole egg. Mix well and filter. Divide in the moulds and bake for 40 minutes in a bain-marie.
