Salmon cannelloni
Surprise your guests and prepare this delicious salmon cannelloni recipe.
1. Cut the avocados in half, remove the pit, peel and cut the flesh into small cubes in a bowl. Squeeze the lemon and pour a few drops of the juice on the avocado so it does not turn dark. Rinse the arugula leaves, dry and chop.
2. Peel the shrimps, slice into small slices and cut 3 slices of salmon into small pieces.
3. Mix 4 tablespoons of oil in a bowl with the remaining lemon juice, salt and pepper. Wash and chop the chives and mix the vinaigrette. Add the chopped arugula with the shrimp and salmon pieces to the diced avocado. Sprinkle with the dressing and mix well.
4. Spread the remaining salmon slices and garnish with the avocado mixture. Roll, cut them in half and divide in 6 plates. Decorate with 1 arugula leaf.
Our cooking tip: You can add to the stuffing small diced tomatoes and cucumbers or even pineapple.
