Ingredients
1. Rehydrate seaweed. Bring to a boil a large pan of water, immerse and cook for 20 minutes. Drain. Wash and drain the lamb's lettuce.
2. Rinse and dry the scallops. Sear in oil for 2 minutes on one side over high heat. Add seaweeds, flip the scallops and let them brown for 2 minutes on the other side. Salt and pepper.
3. Pour into a bowl all the ingredients to prepare the dressing and whisk. Divide seaweed among 4 bowls, add the scallops and the lamb's lettuce. Drizzle with dressing. Serve immediately.
