  Ingredients

1. Wash, dry and chop the parsley, chervil and chives. Peel and coarsely chop the onions.

2. Cut the beef fillet into small cubes and chop them roughly with a large knife.

3. Place the meat in a bowl. Salt and pepper. Add onions, chopped herbs, capers, ketchup and tabasco. Mix together with a fork.

4. Lightly oil six pastry rings and place them on the plates. Divide the meat mixture into the circles. Separate the egg whites from yolks. For presentation, place on each portion half shell with egg yolk in it.

5. Remove gently pastry rings and serve immediately the beef tartare with a rocket salad.
