Mashed potatoes, boiled eggs, prosciutto ham
A family recipe, easy and not expensive to prepare.
1. Wash the potatoes, place them unpeeled in salted cold water and boil for 25 minutes.
2. Rinse, thin out chives, and dry. Drain the potatoes, let cool and peel. Mash them with a fork in a bowl, transfer the purée in a pan. Heat the milk. Place the purée over low heat, fold the hot milk and mix well. Sprinkle with nutmeg, salt and pepper. Stop the heat and cover the pan to keep it warm.
3. In a small pan, bring to a boil salted water, immerse the eggs and cook 7 minutes. Peel them gently.
4. Divide the mashed potatoes in plates, top it with a boiled egg, a slice of prosciutto ham and salad with a drizzle of oil. Add some butter and garnish with chives. Serve immediately.
