Orange panna cotta yule log cake
Want a fresh and fruity dessert for Christmas Eve? Here is a recipe to make an orange panna cotta yule log.
1. Soften the gelatine in cold water. Wash and dry the oranges. Grate the zest and squeeze the oranges. Put the sugar in a saucepan. Add the orange juice and spices. Bring to a boil and let boil for 5 minutes, then remove from heat.
2. Filter the juice of the pulp. Add the softened gelatine. Bring the cream to a boil, remove from the flame and incorporate the orange gelatin mixture. Pour the cream into a mould and place in the fridge for 2 hours.
3. During this time, prepare the sponge cake. Preheat the oven at 190°C (th. 6/7). In a bowl, whisk the eggs with sugar until it turns pale. Incorporate the flour and 1 pinch of salt. Mix. Grease and flour the mould. Pour the batter in and bake for 20 minutes.
4. Remove the sponge cake from the oven, unmold and leave it to cool. Cut the sponge cake of the size of the panna cotta mould. Heat the Grand Marnier and soak the sponge cake. Top the sponge cake on the panna cotta and place in the fridge.
5. Before serving, immerse the mould for a few seconds in boiling water to unmold easilier. Remove the mould, roll and decorate with orange slices, zest and spices. Serve chilled.
