Japanese korokke

For 10 korokke :

1. Cook the potatoes with the skin for 20 minutes in boiling water. Peel and mash with a fork. Salt and pepper, and add 2 beaten eggs. Form 10 flat, oval-shaped pieces.

2. Beat 2 eggs in a bowl, pour the flour on a plate and panko (or bread crumbs) in another. Coat each warmed piece successively in flour, egg and panko.

3. Heat the cooking oil in a skillet and dip to fry. Drain on paper towels and enjoy immediately.
