Free range chicken with carrots
We suggest an easy recipe to cook a free range chicken with baby carrots.
1. Preheat the oven for 10 minutes at 210°C (th. 7). Dice 1 lemon with skin and chop half the green of 1 bunch of small onions. Stuff the free range chicken with the mixture.
2. Place the chicken in a baking dish, brush with 1 tablespoon olive oil, salt and pepper and place in the oven. Once it begins to brown, add ½ cup of water and lower the temperature to 180°C (th. 6). Baste with water regularly until the end of the cooking time (1 hour 15 minutes).
3. Peel 1 bunch of baby carrots and 1 small potatoes. Sauté for 3 minutes on medium heat in a pan with 2 tablespoons of olive oil. Add ½ cup of water and cover.
4. After 10 minutes, add the small onions and pour 1 teaspoon of granulated sugar, combine well. Continue cooking, covered, over low heat for 10 minutes. If necessary, add 1 or 2 tablespoons of water.
5. Remove from the oven, cut the chicken and serve with vegetables and sprigs of chervil. Pour the cooking juice in a gravy boat.
Our cooking tip: Let the chicken rest for 10 minutes under a foil before carving. The meat be even tender.
