Pumpkin parmentier
Make this easy pumpkin parmentier with minced meat and potatoes.
1. Wash and dry the parsley. Chop. Cut the pumpkin into slices and sticks. Steam for 15 minutes.
2. Steam the potatoes in their skins for 20 minutes. Peel the potatoes and puree.
3. Heat the milk and pour into the puree. Mix with the nutmeg. Add the butter in parcels. Salt and pepper. Mix well. Keep warm.
4. Peel and chop the shallots.
5. Heat oil in a pan. Fry the shallot and stir, incorporate the ground meat and parsley. Then cook for 5 minutes while stirring. Season to taste.
6. Preheat the oven at 240°C (th. 8).
7. Oil a gratin dish lightly. Place a layer of ground meat and cover with the pumpkin stick and end with the pureed potatoes. Sprinkle with parmesan and bake for 20 minutes until the top is golden brown.
