Stir-fried cabbage with chorizo

1. Remove the dark outer green leaves of cabbage, cut into four quarters and blanch in salted boiling water for 3 minutes.

2. Drain and chop the cabbage. Peel and chop the garlic. Heat oil in the wok, add vinegar, soy sauce, garlic and ginger.

3. Add the cabbage, raisins, pine nutsand cook over high heat for 10 minutes, stirring. Add the chorizo, lower the heat and cook for 3 minutes.

4. Wash, dry and cut the chives into sections. Brown the sesame seeds in a small nonstick skillet for 1 minute, stirring.

5. Cut the lime into quarters. Turn off the flame and sprinkle with sesame seeds and chives. Serve with lime wedges.
