Halloween pumpkin soup

1. Cut the pumpkin along the top to make a hole. Then hollow it out with an ice cream scoop and keep the flesh to make the soup.

2. Place the onions in a pan with a little bit of butter. Cook over high heat while stirring frequently for 2 minutes. Add all the chopped vegetables and mix them with the onions. Cover with water (until the vegetables are covered) and leave to simmer for 45 minutes. The more the vegetables are cut small, the fastest they will cook. Add salt and pepper. Add 1 cube stock if you wish.

3. Blend it in a mixer and add creme fraiche at the end if you like a thick soup.
