Egg mimosa and romanesco

Featuring boiled eggs, romanesco cabbage and mayonnaise, try this easy egg mimosa recipe. A pure delight!

1. Cut the boiled eggs in half and remove the yolk careful not to break the white.

2. Pass the yolks through a sieve to obtain a fine mimosa.

3. Using a knife, remove a few tips of romanesco florets. Mix them to the egg mimosa, add mayonnaise.

4. Garnish the whites with the mixture and garnish with small florets.
