Quinoa with vegetables

For a balanced meal, try this easy recipe for fried vegetables with quinoa.

1. In a pan cook the quinoa with 2 times of its volume of cold salted water for 15 to 20 minutes, until the seed reveals a little white germ. Drain and set aside.

2. Boil 3 tomatoes, drain and remove the skin. Cut into small pieces. Peel and chop 1 onion. Peel 1 zucchini and ½ green, yellow or orange pepper, cut into small cubes. Peel and crush 1 garlic clove.


3.  In a skillet or wok, lightly brown the onion with 1 tablespoon of olive oil for about 5 minutes over high heat. Add the diced zucchini and pepper, stir and cook for 10 minutes over low heat.

Add the tomatoes and garlic. Salt and pepper. Cover and cook for 20 minutes over low heat, stirring. Add the cooked quinoa and 100 g St Môret cheese with pepper and pink perppercorns. Mix gently and serve immediately.

Our cooking tip: Complement with broccoli, it is excellent! This goes well with grilled white meat or fish.
